How to identify pure desi ghee at home
Simple kitchen tests to tell real desi ghee from blended or vanaspati-mixed ghee — from an Indore halwai family making ghee since 1930.
Smell and colour
Real cow ghee has a nutty, slightly caramel aroma and a pale golden colour; buffalo ghee is whiter. A flat or waxy smell usually means blending.
Colour alone can be faked with additives, so always combine it with the tests below.
The palm test
Rub a little ghee on your palm. Pure ghee melts at body temperature within a minute; ghee mixed with hydrogenated fat stays greasy and solid.
The pan test
Heat a spoonful in a pan. Pure ghee melts fast, turns clear golden-brown and leaves a clean aroma. Adulterated ghee takes longer and can turn yellowish with foam.
Granules (daana)
Traditionally made ghee sets with a grainy texture — daana — when it cools slowly. Very smooth, uniform ghee is often factory-processed.
